Velocity adjusts how fast the paintball is shot out of the gun. If you turn the velocity up, you'll get better distance and speed, but at the cost of less accuracy, and a higher use of CO2. You could also run a higher risk of breaking paintballs in the barrel. If you turn it down, you get more accuracy, and less distance, as well as using less CO2. I'd aim for somewhere in between the two. Also note that if you play in an official game with referees you can be penalized for having your velocity set too high.

Velocity is a simple thing... it basically means speed.
The velocity on a paint ball gun is just like the MPH on your car, the higher the number the faster the paint ball will fly. Please know that most guns cannot go past the 340-350 range without modifications as anything higher than that can cause serious damage to a person. The usual velocity rules at your local paint ball field is around 280, 300. I know at my field its capped at 280.
Also what many don't realize is that shooting a marker off a marked field is something called assault... A crime, one that can get you SERIOUS jail time. Never shoot your gun off a marked field or range, and never shoot other people unless in a game.
