I currently have Independent Trucks Co Genuine Parts Bearings, but my board doesn't go too fast so I was thinking about changing them, I have a box of Spitfire Cheapshots Bearings so should I use them instead?
Also will the bearings affect how fast my board goes at all?

Bearings have minimal effect on your speed (assuming they have similar lubricant, ie both have oil, both have gel, both have grease). But since you have a second set, no harm in trying them.
Try spinning each type of bearing by hand. A difference in lube will be obvious. Grease can be really sluggish at first but breaks in after a while. In general oil will roll better than gel which will roll better than grease.
Your wheels will have a larger effect. Wheels with a higher rebound level (not a measurement you will ever see advertised) will roll faster. You can test rebound by dropping wheels (on a hard surface) and seeing how high they bounce back.

If your looking for speed look at the abec rating, its the number of ball bearings in the bearing itself and if you have the money get swiss bones ceramic bearings they use less but bigger ball bearings ,their the best and fastest bearings i have owned

it increases rotation speed but how fast it goes is all dependent on how much you kick. youll keep going a lot longer though with a good pair of bearings. i recommend you get a set of bones super reds bearings
